| Fruit Pizza |
2 1/2 c. flour
1 1/2 c. powdered sugar
1 c. margarine, softened
1 egg, beaten
2 T. milk
2 tsp. vanilla
1 (8-oz.) pkg. cream cheese
2 c. powdered sugar
Assorted fresh fruit |
Combine flour and 1 1/2 cups powdered sugar. Cut in margarine until pea-sized. Add and mix in egg, milk and vanilla. Chill. Roll out on large cookie sheet and bake at 375 degrees approximately 10-20 minutes or just until edges are slightly brown. Do NOT over bake. Cool completely. Beat together softened cream cheese and 2 cups powdered sugar. Spread over cooled cookie dough. Slice assorted fruit to put on top. Fruit that works best is apples, grapes, blueberries, raspberries, Mandarin orange slices, kiwi, or strawberries. Enjoy! |

| Apricot Chicken |
1/2 c. apricot preserves
2 T. soy sauce
1 T. chicken broth
1 T. vegetable oil
1 T. cornstarch
1 tsp. minced garlic
1/4 tsp. ground ginger
1 lb. boneless skinless chicken breasts, cut into strips
1 med. green pepper, chopped
1/2 c. cashews
2 c. cooked rice

In a large bowl combine preserves, soy sauce, chicken broth, vegetable oil, cornstarch, garlic, and ginger. Add the chicken strips and toss to coat. Transfer to a shallow microwave-safe dish. Cover and cook on high for 3 minutes, stirring once. Add the green peppers and cashews. Cover and cook on high for 2-4 minutes or until chicken juices run clear, stirring once. Let stand for 3 minutes. Serve with cooked rice. Yield: 4 servings Enjoy! |

| Chocolate Schotcheroos |
6 c. Kellogg's Rice Krispies
1 c. light corn syrup
1 c. sugar
1 c. peanut butter
1 (6-oz) pkg. (1 c.) semi-sweet chocolate chips
1 c. butterscotch chips |
Place corn syrup and sugar into large saucepan. Cook over medium heat, stirring frequently until sugar dissolves and mixture begins to boil. Remove from heat. Stir in peanut butter. Mix well. Add Rice Krispies. Stir until well coated. Press mixture into a 13 x 9 x 2-inch pan coated with cooking spray. Set aside. Melt chocolate and butterscotch chips together in microwave. Spread evenly over cereal mixture. Let stand until firm. Enjoy! |
